Another prized multipurpose North American hardwood. Beautiful straight trunked shade tree well known for its sweet edible nuts and brilliant yellow fall colour. Fast growing trees (60 cm /yr) are inherently adaptable to many soil types but nut production is best on deep evenly moist soils. Its hard, heavy strong wood is very flexible making it a preferred for tool handles. Long lived trees to 300 years. Its distinstive bark exfoliates in long strips and is useful creating hickory smoke to flavour meat and fish. First Nations boiled and strained the finely smashed nuts for a delicious, nutritious nut milk. Don’t let the thickness of the husk intimidate you as it falls off easily in segments leaving your hands unscathed and unstained. Need two for proper pollination.

How to germinate Carya ovata seed

Nuts will be stored in moist peat/shredded bark to cold stratify. Most nuts require 2 months cold stratification to break dormancy. Ours usually start germinating in early April. We prefer to germinate all our nut species in a resealable baggie and tuck them in a rodent proof box/ bucket in an unheated greenhouse. When the warm weather arrives, its warmer in the greenhouse (duh) so germination is promoted sooner. Longer the growing season in their first year the stronger and hardier seedlings will be able withstand their first winter a whole lot better than its late grown kin.
